Cantaloupe Sorbet

1-2 very ripe cantaloupes, cut up, seeded, and pureed (about 3 C)
1 C simple syrup
2 T lemon juice

Combine all ingredients and chill well. Taste the mixture; if melon isn't ripe enough, you may want to add more syrup. Freeze in ice cream freezer until firm. For best texture, allow to freeze in freezer a few hours before serving.

Simple Syrup
(yield 3 Cups)

2 1/2 C sugar
2 C water

Combine water and sugar in medium saucepan. Bring to boil; let boil for one minute. Remove from heat and store in a clean glass or plastic container in the refrigerator.
