Chocolate Mint Pie

This is my mother's recipe that I learned over twenty years ago. I had forgotten it, so I asked her, and she looked it up in her little box full of recipe index cards. Thank you, Mom!
  • Make a graham cracker crust in a 9" pie pan (or buy one at the supermarket): crush 22 graham cracker squares in a zip-lock bag, add 3 tablespoons of sugar and 6 tablespoons of melted butter, mix with your hand.
  • Beat two eggs real well. Set aside.
  • Beat one stick of oleo (my mother's name for margerine, but you can use butter if you prefer) till very creamy.
  • Add one cup of powdered sugar. Beat until fluffy.
  • Melt two squares of baker's chocolate. Add and mix until light (it changes from a dark brown to a lighter brown).
  • Add eggs. Beat well.
  • Add a few drops of peppermint.
  • Pour into crust. Refrigerate until set.
  • Yum!
